Most foreigners say "oh, I know Korean BBQ" when they see samgyeopsal. Then they sit down and realize they've been thinking about something completely different. The sizzling pork belly, the scissors that appear out of nowhere, the garlic and ssamjang on lettuce leaves โ this isn't a dish you order and eat. It's something you participate in.
But samgyeopsal wasn't always the national comfort food. Until the 1970s, pork belly was the cheap, overlooked cut. The turning point was the 1997 IMF financial crisis. When beef prices spiked and wallets shrank, Koreans turned to pork belly โ affordable, satisfying, social. The term "IMF samgyeopsal" entered everyday vocabulary. A crisis made it a classic.
There's also the coal miner story. Workers in Gangwon-do's mines believed that eating fatty pork belly would flush the coal dust from their lungs. Medically unproven, but the belief cemented samgyeopsal as the food you eat after a brutal day โ the reward at the end of something hard. Which explains why half of Seoul is queuing outside a grill restaurant at 6pm on any given weekday.
Today, samgyeopsal is where the important conversations happen โ job offers delivered, friendships repaired, first days on the job celebrated. And campsites: in Korea, camping essentially means samgyeopsal. Everyone sets up a grill before the tent pegs are even in the ground. The meal always ends the same way: someone makes fried rice with the leftover fat. That finale is non-negotiable.
