Most people see dakgomtang and think: Clear broth, shredded chicken. Like a light version of samgyetang, maybe? Wrong.
Gomtang was always a beef dish. Bones simmered overnight until the liquid turned rich and opaque. It sat on ancestral tables during rites and fueled market vendors in the centuries before delivery apps existed. The problem: beef was expensive. So the traders of Namdaemun turned to chicken. Cheaper, faster to source. But here's the thing โ young chicken gives you nothing. You need an old bird, long past its prime, cooked low and slow through the night, to get a broth that can hold its own next to beef.

"Here's what surprises people: the longer you simmer chicken, the clearer the broth gets. That crystal-clear liquid looks like it has nothing to say. It has everything to say."
Namdaemun market vendors have been lining up for this bowl since before the market had a roof. It's still their breakfast. Same recipe, same seats, same hands pulling apart the chicken. The tourists found it. The food shows found it. But the regulars just move to the next seat and keep eating.

Not Your Average Bird
Dakgomtang isn't made from young, tender chickens. It's old birds โ raised long enough to have something worth cooking out of them. Young chicken gives you bland water.

Clear โ Weak
The broth looks like it got there by accident. It didn't. Clarity in Korean soups is a skill โ everything impure floats out, everything essential stays in.
